Nicola Gatta Blanc de Noirs 70 Lune” is a Classic Method sparkling wine that embodies the essence of Pinot Noir grown on the calcareous hills of Gussago and Cellatica, in the eastern area of Franciacorta. This sparkling wine, the result of respectful viticulture and artisanal winemaking, is obtained from 100% Pinot Noir grapes vinified as a white wine, without the addition of sulfites or residual sugars.
Spontaneous fermentation occurs in steel tanks with indigenous yeasts, followed by a second fermentation in the bottle according to the Classic Method. The wine matures on its lees for 70 months (“70 moons”), developing remarkable aromatic complexity and structure. The cuvée includes approximately 30% of reserve wine, aged for 7-8 years, which lends further depth and consistency to the flavor profile.
On the nose, it opens with notes of Granny Smith green apple and flint, followed by hints of red berries, tobacco, and a floral bouquet that is both fresh and dried. On the palate, the sip is rich and intense, with aromas of almond, breadcrumbs, and an enveloping creaminess, supported by surprising freshness and minerality. The structure is vibrant and generous, with a dry texture and a persistence that invites contemplation.
With an alcohol content of 12.5%, this sparkling wine stands out for its elegance and complexity, making it ideal for pairing with shellfish dishes, grilled white meats, or medium-aged cheeses. It is advisable to serve it at a temperature of 8-10°C (46-50°F), preferably after a brief decantation to fully appreciate its aromatic evolution.
