Description
The Castello di Meleto Chianti Classico Riserva DOCG is a red Tuscan wine of great elegance and complexity, a true expression of the Chianti Classico region. Made primarily from Sangiovese grapes (95%) with a small addition of Merlot (5%), it comes from the five subzones of Casi, Meleto, Poggiarso, Moci, and San Piero.
Vinification and Aging:
The grapes, hand-selected and harvested, are destemmed and gently crushed. Alcoholic fermentation occurs spontaneously in stainless steel tanks at a controlled temperature of 22-24°C for 12-15 days, followed by a post-fermentation maceration of 7-15 days. Aging lasts 21-24 months, half in 30 hL Slavonian oak barrels and the other half in 50 hL French oak barrels.
Organoleptic Characteristics:
•Color: Ruby red with garnet hues developing over time.
•Aroma: Attractive notes of violet, cherry, and wild berries, accompanied by pleasant spicy hints.
•Taste: Round and velvety, very elegant, supported by robust yet smooth tannins, with a long, persistent, and intense finish.
Food Pairings:
Perfectly complements pasta dishes with meat and game ragù. It pairs wonderfully with aged cheeses typical of Tuscan gastronomy, such as pecorino.
Serving Temperature:
Best served at a temperature of 18°C to fully enhance its organoleptic qualities.
