Description
Castello di Meleto Chianti Classico is a Tuscan red wine that embodies the essence of the Gaiole in Chianti area. Produced mainly with Sangiovese grapes (95%) and a small percentage of Merlot (5%), it comes from vineyards located in the sub-areas of Casi, Meleto, Poggiarso, Moci and San Piero.
Vinification and Aging:
The grapes, harvested by hand, are subjected to alcoholic fermentation in steel tanks at a controlled temperature of 22-24°C for 10-15 days. Subsequently, the wine matures for 15 months: one part in concrete tanks, where the malolactic fermentation takes place, and the other in 50 hl Slavonian oak barrels.
Organoleptic Characteristics:
•Color: Intense ruby red.
•Aroma: Strong notes of violet and cherry, with hints of sweet spices.
•Taste: Velvety entry with round tannins, fresh and persistent finish, good structure and excellent harmony.
Gastronomic Pairings:
Ideal to accompany traditional Tuscan dishes, such as ribollita and tomato soup, as well as grilled white and red meats.
