Description
The Pecorino “Fosso Cancelli” from the Colline Pescaresi represents one of the most refined and terroir-driven expressions of this native Abruzzo grape variety, interpreted by the historic Ciavolich estate, founded in 1853. The wine is produced in Loreto Aprutino, on the hills overlooking the Adriatic Sea, an area naturally suited to the production of fresh, structured and age-worthy white wines.
The grapes come from selected parcels located between 250 and 350 meters above sea level, planted on clay-limestone soils with sandy components and good mineral content. The proximity to the sea ensures constant ventilation, while significant day–night temperature shifts allow for slow and complete ripening, preserving freshness, aromatic intensity and natural structure.
In the glass, the wine shows a bright straw-yellow color. The aromatic profile is expressive and precise, with notes of white flowers, yellow-fleshed fruit, citrus, Mediterranean herbs and fresh almond, accompanied by delicate mineral nuances. On the palate it is focused, balanced and saline, with lively acidity, elegant texture and a long, harmonious finish.
The Producer: Ciavolich
The Ciavolich winery traces its roots back to 1853, when the family, of Bulgarian origin, settled in Loreto Aprutino, establishing one of Abruzzo’s oldest and most respected wine estates. For more than five generations, the family has preserved a philosophy centered on territorial identity, agricultural continuity and deep respect for the landscape.
Today the estate is led by Chiara Ciavolich, who has successfully combined family tradition with a contemporary sensibility, focusing on native grape varieties and the estate’s historic vineyards. The vineyards are managed with great attention to sustainability, low yields and environmentally respectful practices.
In the cellar, the approach is precise and measured: controlled fermentations, minimal intervention and constant focus on expressing varietal purity and terroir transparency. Ciavolich wines are recognized for their elegance, balance and strong aging potential.
