From the picturesque hills of San Casciano dei Bagni, in the heart of the Sienese province, comes a wine that embodies the essence of Tuscany: Il Bossolo by Giacomo Baraldo. This nectar, the result of a meticulous selection of pure Sangiovese grapes, tells a story of tradition and innovation.

Il Bossolo’s winemaking process is an ode to authenticity. Most of the grapes go through a fermentation of about 20 days, entrusted to the native yeasts that naturally populate the environment. In a gesture of oenological audacity, a small fraction of the bunches completes their metamorphosis directly between the rows, giving the wine unique and unexpected nuances.

The maturation of Il Bossolo is a patient and calibrated process. The wine rests for almost a year in French oak barriques at its fifth use, a delicate touch that respects the integrity of the fruit. This is followed by a period of seven months in steel tanks, before concluding its journey with a long rest in the bottle of at least a year and a half.
