Description
The Zampaglione family owns an ancient and organic farm in the Alta Irpinia area. In 2003, they decided to create the Don Chisciotte vineyard with three different areas of Fiano. The wine is aged and fermented in stainless steel tanks, macerating on the skins and resting on the yeasts. No clarification and no filtration.
The Don Chisciotte Fiano 2021 is presented here in its pure essence, clearly embodying the territory from which it comes. This wine was macerated on the skins, creating that distinctive note defined as “Orange Wine”.
We recommend opening it some time before pouring it into the glass to fully appreciate its characteristics. Once in the glass, it will reveal itself with intense aromas of ripe yellow fruit and herbaceous mountain notes with menthol hints.
Enveloping, mineral, rich and fresh, this wine brings with it a unique emotion. It is an ideal accompaniment for fried fish or, for those looking for something lighter, it goes beautifully with a hot seafood appetizer followed by a risotto with cuttlefish in zimino.
