The parcel of this Champagne is Le Chemin de Flavigny, full south, warm and expressive on rather compact chalks, native yeasts, 70% stainless steel vinification, 30% barrique, complete malolactic fermentation for the two bases. Champagne, saline depth but broad and generous, warm and joyful. (dosage 1 gr./l.)
Stéphane Regnault is a young winemaker, but already reveals clear ideas, sensitivity and enormous knowledge of winemaking. After several different professional experiences, as a sommelier in London and in an aerospace engineering studio in Paris, he returned home in 2007, where his father vignéron gives the grapes to the village cooperative. He immediately stopped using herbicides and pesticides.
In 2014, out of the total property contributed, he decided to remove 1.5 hectares for himself and to start the work on his behalf. In 2017 it starts with the organic certification practices (it will therefore be in 2020). His work is on three parcels, two in the commune of Oger, Les Chemin de Flavigny and Le Moulin, and one on Le Mesnil-sur-Oger, Les Hautes Mottes. The expressions of these different places determine three different wines: the parcels have been processed organically since 2010 and biodynamically since 2014. The vinification is both in wood and in steel for the three cuvées produced. In the construction of Champagnes, the main idea is to use a part of the perpetual reserve for each reference: as if to complex the immediacy of an instant with time
