The SCUROPASSO ROCCAPIETRA ZERO Classic Method Pinot Nero Pas Dosé is presented in the glass with a beautiful bright straw color. The nose opens with a pleasant note of pastry, followed by a persuasive caress of acacia honey and a floral component declined above all on jasmine. Intriguing memory of sliced apple, and a touch of sage and thyme to complete the wide olfactory profile. In the mouth very elegant bubble, enveloping and important persistence
The average age of the vines is about 30 years, with a planting density of about 4,200 vines / ha and simple Guyot pruning. The yield is about 100 quintals / ha. Agronomic management is conducted in strict compliance with organic farming with particular attention to the environment. Vinification The grapes are harvested by hand in 20 kg crates, usually in the last ten days of August. This is followed by pressing of the whole grapes with separation of the flower must (grape / must yield: approximately 45%). The first fermentation takes place in steel with indigenous yeasts at a temperature of about 16-18 ° C. Then it rests on the fine lees until the following spring when the draft is carried out. The disgorgement takes place after at least 60 months of permanence on the lees, with annual rotation of the stacks. Before being put on the market, it is left to rest for at least 3 months
