Pascal Doquet Diapason Champagne Grand Cru is a refined wine that stands out for its elegance and texture. Diapason is perfect for accompanying a sophisticated aperitif. It is a Blanc de Blancs champagne made exclusively from Chardonnay grapes sourced from the prestigious terroir of Mesnil-sur-Oger, in the heart of the renowned Grand Cru vineyards of the Côte des Blancs. After aging on lees for 6 months, half of the wine (55%) is stored in stainless steel tanks, while the other half rests in small oak barrels. Subsequently, Diapason is bottled and left to rest in the cellar for 7 years before being released to the market. This extended period allows the vibrant personality of the Mesnil-sur-Oger Grand Cru terroir to soften, while the aromas develop into captivating complexity. Diapason is a magnificent champagne that possesses the intensity of the finest cuvées and significant aging potential. This cuvée can undoubtedly be enjoyed at its best after a minimum of 15 years of aging.
