The Vernaccia Carato comes from Montenidoli’s oldest vineyards, rooted in marine limestone soils high in the hills above San Gimignano. It’s a selection of the best grapes, harvested by hand and vinified with the patience and respect that great white wines require: fermentation takes place in used barriques, where the wine then rests for about a year. No tricks—just outstanding raw material and a deeply artisanal approach by Elisabetta Fagiuoli, a true guardian of the land and spirit of this part of Tuscany.
Carato is one of the most profound expressions of Vernaccia: a white wine that defies expectations, leaning more toward structure and complexity than instant freshness. Notes of Mediterranean herbs, ripe citrus, dried flowers, and spice unfold in a broad, saline texture, with vertical tension that gives it great aging potential.
