Description

The Cerbaiola Salvioni Brunello di Montalcino 2018 is a timeless classic. Vinification in steel tanks for 30 days (27-31°C). Maceration 30 days with frequent delestages. Traditional 20 Hl Slavonian oak barrels (10-20 years old) are used for aging for 4 years followed by 6 months in the bottle. Already on the nose one has the clear impression of not being faced with a normal Brunello di Montalcino. Salvioni’s Sangiovese is intense and complex with notes of ripe red fruits, such as cherries and currants, on a spicy and fresh background of sweet tobacco and aromatic herbs. The sip is soft, velvety, with a great structure and well-integrated tannins. Long, mineral and fruity finish. Surrounded by woods, the 20 hectares of La Cerbaiola di Salvioni overlook the Val d’Orcia from an altitude of 420 metres, four kilometers southeast of Montalcino. There are 3 vineyards planted with Sangiovese Grosso for a total of 4 hectares, each with its own characteristics: soils that vary from chalky schist to stony marl; subtle differences in microclimate that influence the ripening of the grapes. All work in the vineyard is done by hand, with short pruning to obtain low yields and careful selection during manual harvesting. Production is deliberately limited, to get the best out of a unique terroir: 10,000 bottles a year in which only Brunello is produced; and 15,000 for the years in which there is also Rosso di Montalcino.
