The name “Trop M’en Faut!” »Is a counterpart of« Fromenteau »(champenois name of Pinot Gris), which could be translated as« So good that I’ll never have too much! “. With this new cuvée from the Drappier house we rediscover the taste of the wines of the past, with an expression 100% Fromenteau.
Pinot Grigio, this vine with a coppery skin, once very present in the Aube, produced the so-called “gray” wines. Rich, silky and full, the Fromenteau, now very rare, gives a golden juice with notes of forgotten fruits.
Maison Drappier experimented with this grape in 2015 and now extends the experience with a blend of the 2017 and 2018 harvests. The grape, located in the terroir of Urville (Côte des Bars), is organically grown. The minerality of the limestone contrasts with the almost exotic roundness of the Pinot Grigio.
This Trop M’en Faut cuvée! it was vinified and aged in stainless steel vats in order to preserve all the tension and freshness of the wine, without sugaring, filtration or clarification and with natural malolactic fermentation. This cuvée benefits from an aging of 24 months i and is not dosed (Brut Nature).
The Champagne Drappier Trop M’en Faut! it has a pale gold color and a fine and delicate bubble. This cuvée reveals beautiful notes of ripe plum and the tension of the effervescence is softened by notes of acacia honey.
This Trop M’en Faut! Cuvée, produced by the Drappier house, is an elegant champagne that will find its place on the table accompanying spaghetti with bottarga; a tian of summer vegetables or poultry simmered with sweet spices.
