Cupano is located on a plateau 200 m asl in the southern quadrant of Montalcino on a stony hill above the Ombrone river.
Ornella Tondini and Lionel Cousin, fascinated by this corner of Tuscany, have decided to cultivate their passion for wine, the landscape and the history of the place by producing a Brunello di Montalcino with unparalleled charm.
Henri Jayer, the legendary and late Burgundy producer, instilled many of his beliefs in Ornella and Lionel, including the prohibition of using chemical fertilizers or pesticides, the limitation of yields, the rigorous selection on the sorting table of the healthiest and ripest grapes. , to rely exclusively on indigenous yeasts for alcoholic and malolactic fermentation in new French barriques.
Many actors participated in the Cupano project: Carlo Ferrini selected the land for the plants, the Sangiovese clones and which type of farming to use. François Bouchet as an expert winemaker initiated the company to biodynamic agriculture and Giulio Gambelli tasting the wines gave the approval.
