Cupano Brunello di Montalcino 2019 is a modern wine with a high extract and lots of ripe fruit well intertwined with the tannic texture. After vinification, 40% of the wine rests in new French oak for 30 months, thus acquiring softness, spice and intensity. Toasted and sensual notes fill the palate, followed by licorice and candied cherry. Cupano is a small, but established Brunello producer in Montalcino located at the tip of Montalcino, south of Siena, on a stony hill above the Ombrone River. Under the guidance of master winemakers, Ornella Tondini and Lionel Cousin, the estate expresses the memory, landscape, season and history of the place through its Brunello di Montalcino. Henri Jayer, legendary Burgundy winemaker, instilled many of his beliefs in Ornella and Lionel, including avoiding chemical fertilizers or pesticides, limiting yields, rigorous selection on the sorting table and malolactic fermentation on the lees in new French barriques . Carlo Ferrini selected the land for the vineyards and vineyards. François Bouchet started biodynamic agriculture.
