The Blanc de Noirs Largillier from the Maison de Champagne Coessens is a rich cuvée, which evolves in gluttony and finesse.
Due to the limited surface area of the vineyard, the harvest can begin when the grapes are optimally ripe. The whole bunches of Pinot Noir are pressed gently and progressively so that the pigmentation of the skins does not mix with the juice.
Once in the tank, the alcoholic fermentation is regulated and takes place slowly in order to preserve the character of the wine.To strengthen its structure and richness, the Blanc de Noirs signed Coessens benefits from prolonged aging on the fine lees.The low dosage of sugar during disgorgement allows this champagne to retain all its power and generosity.
