Description
Castello di Cacchiano Chianti Classico 2019 is floral with hints of wild herbs and an evident cherry on the palate. A Chianti Classico vintage with snappy and enveloping tannins. Dry and satisfying finish. The imposing structure of Cacchiano Castle has been owned by the Ricasoli-Firidolfi family since the Middle Ages. Giovanni Ricasoli-Firidolfi is now taking care of the estate, who has about 30 hectares of vineyards in this sub-area south of Gaiole in Chianti. The vineyards are high up, on average 400 m above sea level. Stony soils. The Chianti Classicos produced here therefore tend to be more fragrant and elephantine than powerful and opulent. Quality with tradition, no to the imposed fashions of the market. This is the simple philosophy on which the wines of Castello di Cacchiano are based. The new plants always derive from a careful massal selection, long macerations, use of large barrels instead of barriques, are just some of the clues that reveal how Giovanni’s wines aim for a model of Chianti purity.
