Description
The Chianti Classico of Castello di Cacchiano is floral with hints of wild herbs and an evident cherry on the palate. A vintage Chianti Classico with snappy and enveloping tannins. Dry and satisfying finish.
The imposing structure of the Cacchiano Castle has been among the properties of the Ricasoli-Firidolfi family since the Middle Ages. Giovanni Ricasoli-Firidolfi is now taking care of the estate and has about 30 hectares of vineyards in this sub-area south of Gaiole in Chianti.
The vineyards are high up, at an average of 400 meters above sea level. The stony soils. The Chianti Classico produced here therefore tends to be more fragrant and elephantine than powerful and opulent.
Quality with tradition, no to the fashions imposed by the market. This is the simple philosophy on which the wines of Castello di Cacchiano are based. The new plants always derive from careful mass selection, long macerations, the use of large barrels instead of barriques, are just some of the clues that reveal how Giovanni’s wines aim at a model of Chianti purity.
