BIBI GRAETZ TESTAMATTA 2021

Description

Bibi Graetz’s Testamatta 2021 is a pure Sangiovese, coming from old vines of around 80 years old located in the municipality of Fiesole, on soils rich in clay and marl. The grapes are grown with the Guyot and spurred cordon system. The winemaking takes place in barriques with spontaneous fermentation thanks to indigenous yeasts, with frequent manual punching down (6-8 per day). The aging lasts two years in French oak barriques, of which approximately 10% is new.

At sight, Testamatta shows a bright ruby ​​color. On the nose, it offers a complex bouquet that ranges from red fruits to notes of spices, leather and tobacco. On the palate, it is concentrated, with an elegant and vigorous sip, characterized by a pleasant freshness and well-integrated tannins. This wine represents one of the most refined expressions of Tuscan Sangiovese, confirming itself at the top of regional production.

Bibi Graetz is a winery located on the hills of Fiesole, near Florence, around the Vincigliata Castle, a historic medieval building purchased by the Graetz family in the 1960s. Founded in 2000, the company stands out for the use of native Tuscan varieties and for the use of old vineyards, some of which are over 80 years old, such as those located under the castle, cultivated with Sangiovese, Canaiolo and Colorino.

With a vineyard area of ​​50 hectares distributed between Rufina, Greve, Panzano and Giglio Island, the winery grows local varieties organically on soils rich in marl and clay. On the Island of Giglio, the Ansonica variety grows on sandy soils in terraces overlooking the sea. The vinification takes place in steel, using indigenous yeasts present on the skins, with refinements taking place in steel or barrique.
