Description
“Le Chiusure” by Benito Favaro is a refined Erbaluce di Caluso DOCG which embodies the essence of the native Erbaluce vine, grown in the Piverone vineyards, in the heart of the Piedmontese Canavese. The vines, trained according to the Canavesana pergola on pebbly and sandy soils, benefit from an ideal microclimate thanks to the proximity of Lake Viverone, which contributes to optimal ripening of the grapes.
The winemaking involves cryomaceration on the skins for 24-30 hours, followed by alcoholic fermentation at a controlled temperature. The refinement takes place on noble lees in wooden barrels for at least 6 months, giving the wine complexity and structure.
At sight, “Le Chiusure” has a straw yellow color with greenish reflections. On the nose, it offers elegant hints of citrus, white peach and flowers, with delicate notes of hazelnut and almond. On the palate, it stands out for its freshness and persistence, with a long finish characterized by a pleasant note of mint.
This Erbaluce pairs perfectly with tasty fish dishes, such as tuna pasta with cherry tomatoes and mullet bottarga, but it also lends itself to accompanying smoked fish appetizers, fish soups and fresh cheeses. We recommend serving it at a temperature of 10-12°C to fully appreciate its organoleptic qualities.
