The Baciate Me Canaiolo 2021 is a pure Canaiolo produced by the Baciate Me winery, located in the heart of Chianti Classico, in San Casciano in Val di Pesa. This project stems from the passion of a group of friends who decided to recover a vineyard abandoned for years, transforming it into a symbol of dedication to viticulture.

Terroir and Vineyard

The vineyard extends over medium-textured soils with a significant presence of clay, a good supply of organic matter, and a rich skeleton mainly composed of alberese stone. The exposures vary between North-East for the larger vineyard and West-South-West for the smaller vineyard, ensuring an ideal microclimate for grape ripening. The vines are over fifty years old and are planted following tradition, with a dominant presence of Canaiolo, flanked by Sangiovese and Trebbiano.

Cultivation

Agricultural management is certified organic, with particular attention to soil fertility as a primary objective. The training system of the old vines includes spurred cordon, Guyot, and, in some cases, a “fantasy pruning” that follows the needs of individual plants.

Winemaking

The harvest is done manually with a scrupulous selection of the bunches. After soft destemming, fermentation takes place spontaneously at a controlled temperature (maximum 28-30 °C) with pump-overs and a delestage. Maceration on the skins lasts about 20 days, enhancing the structure and complexity of the wine.
