Description

The Baciate Me project was born from the desire of a group of friends to restore an abandoned vineyard in San Casciano Val di Pesa, transforming it into a symbol of passion and dedication to viticulture.

The vineyard that gives life to Baciate Me Avenne Chianti Classico is situated on medium-textured soils with a significant presence of clay, a good amount of organic matter, and a rich structure predominantly composed of alberese. The exposure varies between Northeast for the larger vineyard and West-Southwest for the smaller one, ensuring an ideal microclimate for grape ripening.

The vines are over fifty years old and are planted in a traditional manner, with Sangiovese as the dominant variety, accompanied by Canaiolo and Trebbiano.

Cultivation

The vineyard is certified organic, with a primary focus on soil fertility. The old vines, which exceed 50 years of age, are trained using cordon spur, Guyot, and in some cases, a “freeform pruning” approach, tailored to the needs of each plant.

Vinification

Harvesting is done manually, with a meticulous selection of grape clusters. The varietal composition consists of 95% Sangiovese and 5% Canaiolo. After a gentle destemming, fermentation occurs spontaneously at controlled temperatures (maximum 28-30°C), with pump-overs and one délestage. The maceration on the skins lasts about 20 days, enhancing the wine’s structure and complexity.

Aging

Malolactic fermentation takes place in stainless steel tanks. The wine then ages for about 16 months, with one-quarter maturing in second-passage barriques, while the rest remains in stainless steel and cement tanks. Finally, the wine is refined in bottle for 12 months to complete the evolution of its aromatic and gustatory profile.

• Taste: Structured and complex, with vibrant freshness and great drinkability. Well-balanced and persistent, it stands out for its refined harmony between acidity and tannins.
