Description
Vernaccia Carato originates from Montenidoli’s oldest vineyards, cultivated on soils rich in marine limestone in the upper reaches of the San Gimignano hills. It is a selection of the finest grapes, hand-harvested and vinified with the time and patience required for great white wines: fermentation takes place in used barriques, where the wine subsequently rests for about a year. There are no tricks—only excellent raw materials and a radically artisanal approach, bearing the signature of Elisabetta Fagiuoli, a true guardian of the rural and spiritual traditions of this corner of Tuscany.
Il Carato represents one of the most profound expressions of Vernaccia: an unconventional white wine that prioritizes structure and complexity over immediate freshness. Notes of Mediterranean herbs, ripe citrus, spices, and dried flowers blend with a broad, saline texture and a vertical drive that allows it to stand the test of time.
A white wine that is not afraid of aging, and that deserves a place at the table alongside white meats, truffle dishes, rabbit stew, or aged cheeses.
