The vineyard was planted with the <strong>Syrah<\/strong> variety in 2002 after a thorough geological investigation.<\/p>\n<p class=\"p1\">Ideal exposure: southeast, and the ideal soil: a mix of clay, silt and chalk.<\/p>\n<p class=\"p1\">Stefano planted the high density vines, 7000 plants per hectare and immediately adhered to the principles of biodynamics for the management of the vineyard.<\/p>\n<p class=\"p1\">In the cellar, fermentation takes place spontaneously in small concrete tanks and without the use of pumps, sulfur or temperature control. The wine is then left to decant naturally in a combination of wood and concrete tanks, where it is held for 14 months before bottling.<\/p>\n<p class=\"p1\">The resulting wine is of the highest level, with notes of black olive, cassis and minerals.
